With all due respect, I created this recipe based on Seitan that dates back 1,500 years ago Buddhist monks in the sixth century as a meat substitute.
White Flour contains 10 – 12% of protein which makes it one of the suitable choices to make Seitan (Vegan Chicken) with. Someone who is off white flour (with high protein) can use any other flour including atta. Seitan is one of the plant-based meat alternatives that comes closest in texture to chicken, duck, or steak which are high in fat leading to heart dieases.
According to Harvard Health Seitan is listed as one of the healthy plant based diets. “Here are some foods and nutrients to pay special attention to. Protein. A variety of vegan foods are rich in protein. They include soybean products (tofu, edamame, tempeh), seitan, lentils, beans…”
Seitan is made from gluten hence, people with celiac disease can not consume it. The protein in the flour that, when mixed with water, becomes stretchy and elastic. Because the starches are removed during the washing process seitan is made, it has very little fat and carbs. In addition to protein, seitan contains the nutrients selenium, iron, phosphorus, and calcium.
There are numerous websites and organizations working to make Seitan popular in the countries where vegan foods are just gaining popularity. Check out the following links:
